• ½ oz fresh lime juice
• 1 oz Passion fruit syrup
• 2 oz Westerhall 7-year aged dark rum
• Glass- Coupe
• Garnish- Lime twist

Fill a coupe with ice and water to chill. After well chilled, throw out ice and water. Dip wet rim of coupe into a nutmeg and sugar mixture. In an ice filled shaker, pour all ingredients and shake vigorously for 15 seconds to get a really good chill. Strain into coupe and garnish with lime twist.

Rosemary Jalapeño Daiquiri

Muddle 1 slice jalapeño and half sprig of rosemary with 3/4 oz simple syrup. Add 3/4 oz lime juice and 2oz Mount Gay silver rum and shake with ice. Strain into ice filled glass and garnish.

7 Things You Probably Didn't Know About Yacht Chefs

On a mega-yacht, 100-hour work weeks are the norm.

Below Deck sailed onto the scene in 2013, leaving in its wake a sea change across reality television as a genre. Audiences tuned in to the show—and its many offspring—to get a first-hand account of the $175,000-per-week charter trips of such exalted guests as Roy Orbison Jr. and the Queen of Versailles.

What separates shows like Below Deck from other reality programming is the amount of unrestricted access into the lives of people making a living mixing drinks and cooking five-star dinners for the exorbitantly wealthy. So, just how real is this account of luxury on the open ocean? "Poor management, poor behavior, bad seamanship," says David Skolnick, an accomplished yacht chef. "I've never seen the sorts of shenanigans they show in real life."

I spoke to real-life yacht chefs to find out what it's really like cooking at sea.

Restaurant experience is not required

Rachel Cunningham grew up in New Zealand, but spend the better part of her life exploring the world. "Yachting allows me to travel and get paid for it," says the 32-year-old chef. "The world is my home, and super yachts are just part of my commute." Cunningham dabbled in a lot of industries before settling into the yacht life—travel agent, tech journalist, website developer—but never thought about pursuing a culinary degree before becoming a yacht chef.

"I always had an interest in cooking, but never really considered going to culinary school," says Cunningham. "Nothing about that appealed to me. The high cost of the education followed by low wages and an unsociable career afterward? No thanks. I kept cooking as a passion. While I traveled, I would stop in small villages and watch locals preparing food."

She "knuckled down" after her first yachting job, spending weeks meticulously studying cookbooks and researching recipes online.

"I worked late as often as I could trying new techniques and learning more about high-end ingredients," she says. "I was so hungry for information and wanted to be better. The great thing about yachting is that once you have your foot in the door, and you persevere and work hard, you can continue upwards easily."

Skolnick is self-taught, as well. "Initially, I learned from public television: Julia Child, Jacques Pepin, Martin Yan, Frugal Gourmet, and others," he says.

The hours are brutal

"I've worked on busy yachts where it was not uncommon to work 16 hour days 7 days a week while on charter," says Cunningham. "It's easier to do when you are younger, but it's not sustainable and many yacht crew burn out working like that."

She adds, "A more realistic yacht experience would entail a yacht chef working 12 hour days, 7 days a week while looking out of the porthole at a gorgeous white sand beach but never going ashore."

... but the tips are ridiculous.

Cunningham has a friend who made a charter tip of "just under $40k per crew member … with more than 30 crew working." That's about a million dollars in tips total.

The day-to-day isn't that much different from a hotel

Cunningham's day usually starts at 6 a.m., where she heads from her room to the galley to prep breakfast and get organized. She values mornings as the only part of the day where she can make coffee and gather her thoughts.

Pastries go in the oven, guest are made fruit platters and charcuterie boards, which are sent out with the stewardesses. In the event kids are on board, Cunningham will pull out pancake and waffle batter—because what kind of kid doesn't want pancakes and waffles? Unlike Below Deck , Cunningham's been fortunate enough to work with a sous chef; they come in around 8 a.m. to work on crew lunch and dinners. From there, breakfast is made, the galley is cleaned, lunch and dinner get prepped, and so on until the guest is full.

"Depending on the guests, we can close the galley down as early as 8 p.m. or as late as 1 a.m. when we have party guests on," she says. "I've worked on yachts where it's normal to get a phone call at 2 a.m. for wagyu burgers or chocolate brownies because the guests have the munchies. It can be quite demanding."

You can't just pop out for sugar on the sea

One of the most difficult aspects of being a yacht chef is knowing that you can't just pop out over to the corner shop when you run out of an ingredient. "In general I start with Google," says Skolnick. "Online shopping and curbside pickup is the silver lining of COVID. In particularly limited places, or where the language problem is significant, I'll use a yacht agent. The key is flexibility in the face of substitutions."

"I once bartered sheets of gold leaf with micro herbs with another yacht while in Antigua," says Cunningham. "You have to get creative and really think outside the box."

Skolnick notes that the yacht kitchens are exceptionally small, so creativity is paramount: "Limited tools. Limited power. Limited space. Limited storage. Limited shopping," he says. But you make it work. "One of my mentors, chef Bernie Meehan, told me 'a good cook can make anything, anywhere, with anything.'"

The meals are as good as they look

"We source ingredients from all of the world for our guests," says Cunningham. "I use a variety of provisioners to do this, some of them specialize in high-end products from Japan and parts of Europe. None of it is cheap! I just did an order for some wagyu strip loins for $100 a piece. We get the best caviar, sometimes spending tens of thousands of dollars on it, especially when we have Russian guests. Truffles are pretty much standard. It is pure decadence. Of course, if we get really stuck and need things delivered ASAP, there are always the boss's helicopter on the aft deck to use."

Charter guests aren't all that bad

Below Deck is one of those shows that puts the … rampant insanity of the rich and famous on display for the rest of the world. Obviously, not every guest is a Doris—in fact, some of them can be pretty darn cool.

On one of Cunningham's favorite charters, the guests "were so friendly with the crew," she says. "The kids would run into the galley every morning to watch us cook, and the adults always had a glass of red wine in their hands. One night the men came into the galley to ask why they chefs were not drinking (we do not drink at sea, or on the job, as a rule). They thrust a $1500 bottle of red wine at us and demanded we share a drink with them. It was a lovely gesture, and I was all too happy to oblige. After all, the guest gets what the guest wants, and who am I to turn down a beautiful bottle of full bodied red wine at 11 p.m. after working 14 hours straight?"

The cost of a yacht charter is dependent on a number of factors, including the type of yacht, the charter destination, local taxes, and the base cost. (If the yacht has a celebrity owner, well that too, can add to the cost.)

Therefore, yacht charters have a wide range of base prices. That’s why charters can cost from $10,000 per week on smaller sailing yachts and catamarans, up to $150,000+ per week on the most luxurious motor superyachts.

Yacht Charter Price Structure: “All-Inclusive” vs “Plus Expenses”

In the world of yachting, two types of crewed yacht charters are available to you – “All-Inclusive” and “Plus Expenses” charter experiences. What do these terms mean exactly? Here’s a quick look:

• All-Inclusive Yacht Charters – Some charters (mainly catamaran and monohull charters in the Virgin Islands) offer all-inclusive rates. That means rates are based on the number of guests, and they include all food and drink, water sports, and fuel costs. Dockage and taxes, though, are usually charged separately.
• Plus Expenses Charters – Rates for larger motor yachts do not include running expenses, which must be paid separately. For these luxury charters, the base price is for the yacht only. Additional expenses, i.e. food, bar, fuel, dockage, port taxes, and other expenses, are charged separately. Most frequently, the running expenses are paid by an Advance Provisioning Allowance, or APA, which is typically 35% of the base price; this is an amount that’s paid prior to the charter.

What can you expect to pay for a catamaran, a sailing vessel, or motored yacht? Here’s a quick overview of the average cost to rent a yacht (not including extra expenses) for the most common types available:

Factors that Affect Yacht Charter Prices

Since charter yachts are privately owned, prices are set by the owner. This can explain, in part, the wide range of differences in price between boats of similar lengths. Yet, several other factors can significantly impact price, including:

• The Yacht – The year the boat was built, the builder, previous owners, and the boat’s selection of water toys can also increase the cost of a yacht. Boats can also develop a reputation, i.e. the largest or most luxurious, or having a famous builder or previous owner. Reputation can also affect pricing.
• Season – Prices typically increase in the high season – i.e. high summer in the Mediterranean or winter in the Caribbean – and decrease in low seasons.
• Destination – Your charter destination also plays a role in charter cost. For example, prices increase in areas without large charter fleets (i.e. the Galapagos), whereas Bahamas yacht charters,   BVI charters , or Mediterranean yacht charter are priced more competitively.

Additional Costs Considerations on Yacht Charter

In addition to the cost associated with running the yacht and provisioning, there are a number of other costs that must be considered. These are the most significant:

Advanced Provisioning Allowance

The APA on Plus Expenses charters equals roughly 35% of the yacht’s base price. This is a fee that’s collected prior to charter, and it’s similar to an expense account the captain can access during the charter. At the end of the charter, you will receive a detailed accounting of your APA account, plus any unused APA funds in cash.

In the case of overages, you may be required to replenish the APA account during the charter. This can be done with cash, although many choose to set up accounts with their charter brokers , which can be accessed if requested by the captain.

Taxes and Value Added Tax (VAT)

Most boats – whether all-inclusive or Plus Expenses – will not include local taxes or a Value Added Tax into their charter rate. The charterer will be responsible for paying those taxes. Taxes range significantly by destination; here’s a look at some of yachting’s most popular destinations:

• The Bahamas – Tax: 4% plus 10% VAT
• BVI – Tax: between $6 and $16 per person per day, depending on the flag of the boat
• Croatia – VAT: 13%
• Florida – Tax: 6% for Broward County, 7% for Miami-Dade County
• France – VAT: 20%, however, 10% can be applied when an itinerary includes International Waters
• Greece – VAT: 12%
• Italy – VAT: 22%, however 6.6% (over 24m) and 8.8% (under 24m) can be applied when an itinerary includes International Waters
• Montenegro – NO VAT
• New England – NO TAX
• Spain – VAT: 21%
• Turkey – NO VAT

Charterers can purchase cancellation and curtailment insurance – which is similar to traveler’s insurance. This insurance can help cover costs if a charterer must cancel or shorten the charter. Charter brokers can help you weigh insurance options, and often offer several different options.

Crew Gratuity

While crew gratuity is certainly not mandatory, it is recommended, particularly if you were truly impressed with your charter experience. In general, crew gratuity is roughly 15-20% of the base charter rate, which is handed to the captain at the conclusion of your charter.

Delivery Fees

While these fees do not apply on most charters, you may be asked to pay delivery costs if you are not chartering in the yacht’s normal cruising ground. In most cases, you will only be required to cover the fuel for the trip.

How To Choose The Right Mega Yacht To Charter.

Charter group size.

First you'll want to take your group size into consideration. If the group is large, then this is definitely the way to go. The majority of super yachts for charter accommodate between 8 and 12 guests, making them an ideal size for family vacations or parties comprised of multiple couples.

Charter Destination

Second you'll need to decide where you're going. If you are thinking about chartering in the Caribbean, for example, then having a wide choice of watersports equipment and a swim platform may be necessary; spacious decks for sunbathing may also factor into your decision. Guests considering the Mediterranean, on the other hand, may find outside dining areas more appealing. The Crew of a Mega Yacht

These mega yachts have large crews to operate them and provide the level of service their guests deserve. What is often overlooked, particularly for guests who have not chartered these yachts before, is how important the crew is in the private charter yacht selection process. The owners of these megayachts have very high expectations of service and the unique attributes they each prefer in their crews. Obviously that starts with the captain and chef but extends thru-out the whole crew mix. The world’s most expensive super mega yachts currently on the charter market come with a hefty charter rental fee but offer some of the top of the line and over the top amenities.

Their price tag will include state-of-the-art amenities such as swimming pools, helipads, incredible wellness centers, an array of sea toys and all with five-star service by their crew.  Offering an outrageous style of living, they have catered to some of the most influential and famous people worldwide.  From Presidents, world leaders to pop and rock stars the charter clientele of these yachts are the movers and shakers of the world all willing to pay incredible sums of money to charter a super mega yacht .  Charter these luxury floating palaces all over the world from the Maldives, Thailand, Seychelles, Caribbean, Mediterranean and beyond.

We start with the FLYING FOX , built by the German shipyard Lurssen, at a mere 446 feet in length which claims to be the largest of all charter yachts.  She accommodates up to 25 passengers in 11 spacious double suites.  You can find aboard her five decks two helipads, a 12-meter-long swimming pool and an indoor Jacuzzi. There is a spectacular two-story 400 sq mt spa that includes a steam room, Cryo-sauna, hammam and spa room. One can also work out in her fully equipped gym and take a dip in the 12 meter swimming pool.  Further entertainment needs can be met by curling up in front of a fireplace, catching a movie in her cinema with D-box seating that mimics the action on screen or visiting the beauty salon to be fully pampered. She has a lovely beach club and boasts an extraordinary collection of sea toys and six tenders.  The Flying Fox is easily accessed using her helipads and once aboard there is an indoor elevator to traverse her multi levels.  She certainly offers an action-packed vacation serviced by a professional crew of 55.  Her weekly charter rate is Euro 3,000,000/week and a security deposit is required of 200,000 Euros.

OCTOPUS comes in just a bit smaller than FLYING FOX at 414 feet in length. Even with all her size and a crew of 42, she only accommodates up to 12 passengers in 13 suites.  Onboard parties and events can host up to 350 guests, however. All the usual suspects of amenities are found aboard from a well-appointed wellness center, gym, heated fresh water pool, numerous Jacuzzis, fully equipped dive center to a helipad, dance floor, movie theater and even a glass-bottomed underwater observation lounge.. There is a huge array of sea toys including 4 wave runners, a jet ski, towable toys, kite surfer, kayaks, six tenders and more.  She has storage for up to eight tenders and a ROV Triton submarine, For the adventurous charterer they have an internal dock that allows a 20 m submarine to float to storage.  Come aboard with only Euro 2,200,000 a week in charter fees.

QUEEN MIRI (Ex Delma) at 302 feet in length is known for her exception in size and specifically for her spa facilities. There is a professional salon, a full massage suite, steam room, sauna, heated swimming pool and Jacuzzi. The gym features the latest in professional equipment for the more active guests. Children will be well entertained in a playroom or by visiting the onboard theater and the adults have a full conference room if one needs to attend to work. Her plethora of sea toys range from Flyboards, jet skis, scuba diving equipment, scooters, three tenders to water slides.  Her 18 suites house up to 36 guests in total luxury with 36 crew members at attention, Charters are Euro 1,500,000/week.

LANA features a uniquely sized Owner’s suite of 110m large as apart of her 351 feet in length. She is the third largest yacht built by the Italian designer Benetti.   One can be fully entertained in her pool, at the spa and gym or relaxing at the beach club or listening to the piano. Her eight staterooms can house up to 12 guests and 33 crew members are aboard for the utmost service. Relax at the spa or hammam, take a dip in her pool, visit the beach club with fold-out sea terraces and experience all her charter focused array of sea toys or take in a movie at her theater. There is something for all to enjoy.  She charters at Euro 1,800,000 a week.

DREAM at 349 feet in length was once a cruise ship that has meticulously been converted to a luxury mega yacht accommodating up to 36 guests in 22 staterooms. She charters at Euro 2,000,000 a week. She has a multitude of wellness facilities full beauty salon that offers an array of treatment, spa, movie theater, and gym. Head to the sundeck to the large swimming pool for a dip jump in your chopper at the helipad to dash to the nearby island or to the beach club to enjoy all the fun water toys.  Highlighting her sea toy trove are two laser sailboats and three wave runners, helping to make for an amazing vacation aboard.

KISMET is 312 feet long and was built in 2014.  Luxury is boundless aboard this mega yacht from numerous pools, one on the upper foredeck with Jacuzzi offers magnificent views of the sea ahead. Of course, the full-service spa has all the bells and whistles expected on a yacht of this size.  Kismet is one of the few yachts that offer a basketball court aboard which even doubles as a helipad.  The aft deck has not only a fire pit but also a waterfall to set the ambience.  With only seven staterooms aboard, one can imagine their size.  Five-star service is afforded by her crew of 28 that service the 12 guests aboard. Her sea toys garage is full of fun and expensive water toys and the area also provides room for yoga and aerobics waterside. She is one of the most sophisticated super yachts for charter.  You can charter this yacht at Euro 1,200,000 a week.

MADSUMMER clocks in at 312 Feet in length.  She is outfitted with all the comfortable amenities to make the charter feel right at home and pampered to the utmost. She has all the normal wellness items such as a full spa, gym, and even a dance floor to keep the days full of activities. Her 12-meter pool allows for a cool dip while cruising and midnight swim under the moon.  The deck jacuzzi offers a great place to sit back a sip a glass of champagne. Her beach club is well equipped with all the sea toys for entertainment and even a flyboard to soar above the sea and a full room dedicated to diving. She has 10 spacious staterooms accommodating up to 12 guests. One of the most notable details is her magnificent lacquered custom built dining table. She is Helicopter ready (with a below deck storage to keep the helicopter) to welcome her guests any way.  Her charter rate is Euro 1,600,000 a week.

LADY S , a 305 Foot motor yacht built by the famed shipyard Feadship, was delivered in 2019 making her one of the newer charter mega yachts. She has accommodation for 12 guests in seven cabins. She has all the desired amnesties aboard to even housing a basketball court.  LADY S boasts the first IMAX cinema to be installed on a motor yacht.  Getting a bit warm under the sun then plunge into her ice-plunge pool to cool off or jump in her deck jacuzzi.  The family will all join in the fun with her waterslides.  Her large beach club opens on many sides making for a seamless transition to the sea. The adrenaline adventure seeker can try the Zapata Racing Pro Series Flyboard.   Work out in her gym and relax in the steam room afterwards. Arrive in style via her helipad and be escorted to the mainland in her limo tender.  Her weekly charter rate is Euro 1,635,000.

Another Feadship, the SAVANNAH boasts 273 Feet of pure luxury. Her superstructure is said to be one of the first true hybrid motor yachts.   Her guest, up to 12 are accommodates in six massive suites and serviced by a crew of 24.  Her underwater lounge and the master suite with its wall of glass are very impressive. There is never a dull moment aboard the Savannah.  She has a 30-foot pool, a dance floor and DJ booth, a full equipped state of the art gym and spa. Her beach club is filled with fun sea toys from two sailboard, sea bobs, waverunners, jet skis, wake boards, four tenders and more.   Notable is her modern art collection. Chartering at Euro 1,000,000 a week, she comes in with a smaller price tag than the selections above.

So why are these yachts so expensive to charter?  There are many factors involved but the main cost is the cost of building. Most of these yachts are designed and built by the best of all naval architects and shipyards in the world. The craftsmanship found aboard is incomparable. Due to the large size of these yacht, as you elevate in size the entire volume of the yacht increases and expenses double, triple if not a lot more, per foot.  The larger the yacht the higher the running expenses get, and more crew are required to give the five-star experience expected by all guests. The larger they are the more sea toys and onboard amenities are expected.  Therefore, fully well outfitted and maintained gyms, saunas, hammam

s are all expected.  Pool, Jacuzzi’s, and helipads are part of the normal build. Part of the five-star service include gourmet food and often the chef has worked in Michelin star restaurants.  A week’s cruise can cost astronomical fees as all the menus are personally created to the clients’ desires. The high ratio of crew to clients helps provide outstanding service for all.  Part of the crew is often a masseuse, hair stylist, yoga and gym instructors or certified dive instructors; all there to improve the wellness experience.

Yacht Charter & Superyacht News > Written by Eva Belanyiova The result of a wonderful passion for creating ship models is this 1:50 scale model of the 126-metre luxury motor yacht OCTOPUS , which was built by the prestigious German shipyard Lurssen in 2003. Jurgen Goller and Roland Hache constructed the 2,52 metre superyacht OCTOPUS model and presented it for the first time on water this September. Roland Hache also built a model of the motor yacht Lady Lola (see picture at the bottom of the article). Scale model of the motor yacht Octopus It took two years to build the Octopus Yacht Model and she was built based only on pictures and different photos found on the internet. The two friends had absolutely no access to the general plans, layout drawings or any other designs of the original yacht. Model of the luxury yacht Octopus The hull of the Octopus Yacht Model was constructed in GFK and ABS, polyester and wood were used for the rest of the parts. The railing was created using different metal parts. Scale model of the luxury yacht Octopus - the model is 2,52m long Weighing 62kg, the model is fitted with 2 Bosch electrical engines and has a lead acid battery of 12 V – 7,5 Ah with a duration of about 4 hours. It has impressive 460 led lights on its five decks, which can be regulated thanks to a dimmer, showing her elegant silhouette when put on water at night. Unfortunately, we live in a culture where it is nearly impossible to go broke making mediocre movies or producing annoying and cloned rap music, but quality, if not priced "competitively", frequently becomes extinct, in the mass market sense...try finding a a good quality toaster or other small appliance at any price. I fully plan on unveiling all of the acquisitions when we have more space, I hope, in a few years, assuming I don't prematurely expire ( I am 63, but in much better shape than most my age... I should know, I'm a physician ). However, no one's future is assured. Interestingly enough, my wife inquired today as to whether a friend of hers could bring her grandchildren over to see my ship models, as they seem to have a fascination for sailing ships (probably watched Johnny Depp in Pirates of the Caribbean too many times), so I would say that's a positive sign.
