The Sailor's Style Guide: How to Dress at a Yacht Club

If you've been invited to a casual yacht club rendezvous, you'll need the right threads to fit in.  in this guide, we'll walk you through the yacht club attire you'll need to fit in. hint: you can find the perfect outfit head to toe with castaway.

You've been invited to a meal or event at a local yacht club, but you've never been to one before. Suddenly, the panic sets in. What should you wear? Fortunately, there are lots of options and visiting a yacht club does not mean you have to spend a lot of money just to fit in. This post will give you some pointers on yacht club attire so that you feel neither under nor overdressed, and can really enjoy yourself and have a great time at the club.

Before you even think about what to wear, check to see if the yacht club you're going to has a dress code posted online. Most of them do, and the rules can vary from club to club. The Nantucket Yacht Club , for example, requires semi-formal attire for its dinners and cocktail attire including ties for men during its dinner dances and balls. The Hyannis Yacht Club goes into a little more detail. It accepts stylish casual wear including clean, neat jeans and shorts for lunch. For dinner, guests are expected to step it up by leaving the denim at home and wearing sports coats. Different areas of a club may also have different dress rules. Bars and outdoor decks tend to more lax and allow casual clothing.

Sometimes, the easiest way of narrowing down what to wear is to eliminate what you should not wear. This is just a partial list of how not to show up at any kind of yacht club unless you want to be denied admittance or receive a lot of disapproving glares. All rules listed apply to the inside of the club, and can vary for beach and dock rulings.

Flip Flops or Going Barefoot: This rule applies INSIDE the club, or for any meal time. Most people love the beach, but going barefoot is not only unacceptable, but unhygienic.

You'll want to wear appropriate footwear such as sturdy sandals or closed toe shoes. While a lot of children and adults love their flip-flops, they may be a little too casual for a yacht club atmosphere. The most popular choice here is a boat shoe style but a bridle bit driver is always appropriate - check the latest . The lightly worn leather and pencil-curled laces fit the bill in the cool department.

Torn, Stained, or Worn Clothing: Any attire that is showing signs of wear such as rips, stains that never came out, holes, missing buttons, etc. should be left at home.

Baseball Caps and Other Hats: Most yacht clubs prefer that men remove their caps when inside the venue. Save them for the sailing excursions.

Extra points on the water if you rock the Club’s Burgee on the hat!

Swimwear: Just a no-no. Save it for the boat and the beach. A cover-up can be acceptable for the patio.

Going Shirtless: Nope!

Undershirts as Shirts: See above. You may also want to be careful about choosing a t-shirt, particularly one with graphics, when visiting a yacht club. Most prefer that you wear a collared shirt, even if it's a casual one such as a polo shirt.

Tank tops for men and any tank tops for women that are skimpy and don't hide undergarments should be saved for another occasion.

Women have a lot of options when it comes to visiting a yacht club. Linen and cotton make the perfect summer blouses. A light but structured Sleeveless Top paired with a  sweater is perfect for warding off cool sea breezes when you're out on the deck. A polo or collared shirt works well for the yacht club scene as well. You can also consider a dressy blouse that has a little bit of flounce to it. If shorts are allowed for the time and area of the club you're visiting, consider sporting  Sailing  shorts  with a cute anchor embroidery. They're cool, classy, and show off just the right amount of leg. Casual skirts and dresses are perfectly fine as well as long as they're not too short and revealing. If you're attending a party at a yacht club you may need to wear a nice cocktail dress, or a classic Tunic Dress for a day event. Special events such as balls and dinner dances usually specify what is appropriate attire on the invitation.

Don't forget to have fun with accessories! A straw handbag can complete a nautical themed look.

For most casual yacht club occasions, men can't go wrong with a collared shirt and long pants or Cisco Shorts . Pastel and preppy shades such as summer green, hurricane red, and islander blue rule here.

When casual attire is allowed, collared sport or polo shirts are always in fashion. Seersucker and linen shirts are available in several colors and patterns for summer club get-togethers. If jeans are not allowed, seersucker or cotton canvas pants are still casual and comfortable yet dressy enough for all areas of a yacht club. If you really want to show your love of nautical dressing, consider wearing a fun Embroidered Pant !

Or you can opt for solid pants but add some nautical flair with an embroidered belt . Classic summer staples like Seersucker and Madras Patches will make you the talk of the Club, in a good way!

For those chilly sea breezes and evenings, a quarter zip pullover wards off the cool air while keeping you stylish and casual.

It's a good idea to keep a sportcoat and a few ties in your closet just in case the yacht club you're visiting requires it. Opt for a fun all over embroidered jacket, or a Madras Patchwork style to really up your game.

Kids' clothing should conform to the same yacht club rules as established for grown-up guests. If you really want your son to look cute, consider dressing him in the same matching outfit as dad.

Palm Beach yacht club is a throwback to when elegance and service were expected. Pbyc lives up to this tradition including five star menus and fair pricing. A six star experience! 😎😎😎😎😎😎

Beautiful view! The Best Service! Outstanding food! One of the largest menus I have ever seen in any restaurant. I had to Bronzino. Others had Sea-bass and the lobster tail. We are so grateful to be invited by a member while we are visiting Palm... Beach. More

After reading the wonderful reviews on the Restaurant I called to make reservations and was disappointed in knowing that only members can dine. Have to find out membership qualifications!

I ordered the seared tuna, when it arrived it had a strange beige color and I told the waiter that I had asked for it rare, after arguing with me that the tuna was rare he asked me to taste just to make sure, when... I tasted it I realized that the tuna had gone bad and I had to spit it out in the napkin. I wonder why anyone goes there, yes it does have a nice view but everything else is just awful. The service is terrible, the waiters have the sourest attitude I have encountered, the food is mediocre and ridiculously overpriced, parking is obligatory valet, or else since they have taken all nearby spots one must park two blocks away. Additionally service is so slow you have to allow 2.5 hours for lunch, it takes them 45 minutes just to bring the menu. Oh, yes one more thing, they try to overcharge you if you are not careful. The Thanksgiving dinner was horrible, the turkey was cold and dry, the white meat looked, tasted, and had the consistency of pressed turkey breast, which probably was. The side dishes were unimaginative and bland, the gravy must have come out of a can, the apple... pie was dense, and the price was abusive given the quality of the food. And now for the service, they were arrogant, inattentive, and poorly trained, they forgot to get the order for one of the guest at our table, they forgot to bring wine for another, and then charged twice for it, they took the order for the hosts before that of their guests, they complained about having to work on Thanksgiving, just a very poor level of service overall. Oh, and did I forget to mention that it took over one hour to be served? Will not be going back there again for this type of dinner, or maybe for any other, their prices are ridiculously high for what they serve and the food is nothing special. Once you get over the view, which is nice, there are so many better places to eat in either Palm Beach or West Palm Beach. More

Great food, great service, ambiance and a superb location are part of the reason I eat here frequently. I love everything about this venue and think that it’s a gem.

Second visit to Yacht Club and same result. Extremely disappointing food. Wife ordered lobster. Came out overdone and had to be sent back. Came back with two more lobsters that were basically raw and could not be eaten. I ordered a special "Filet Mignon" skewer... with onions and peppers. $50 for about 2-3 ounces of meat a sliver of onion and the peppers were basically non-existent. Started with Lobster Bisque which was excellent. Fantastic views, but food, in our cases, simply doesn't measure up. If this restaurant wasn't on the water, it would be out of business in months. Over the years I have had some of the best meals from the kitchen of The Palm Beach Yacht Club. I hear that the kitchen is tiny, but the menu is varied and each dish is beautifully prepared. If you are not a member and... receive an invitation to dine here, either lunch or dinner, be prepared to be surprised. The view over the ICW is another surprise, especially at night. More

The view of the water is very good the service is good ONLY IF YOU TIP 30-40 %…..the food is good but excessively overpriced. The service is pretentious…average and inexcusable for the price….it’s as if the waiters are captains of industry and serve you in... an arrogance that is just unbelievable….unless every word they say generates a tip…..give a waiter a dinner suit and he transforms into an unapproachable artist who shouldn’t be doing this job as it’s beneath him. The kitchen produces good food but service arrogance spoils all…..this is such a shame…. It’s the kings cloths…maybe they will wake up and provide service that should be perfect for the excessive prices charged…..where old money has lost its way. More

As a long time member it never ceases to amaze me how superb the food is and the service so impeccable. It was rated one of the top clubs in the world. In my opinion there is no other. Its the best.

We were invited here with friends. Upon arrival, Our friends (members) have not been here for some time but were greeted with open arms. We were seated promptly. Every table has an awesome view of the water. The servers were spot on. I had the... soft shell crab appetizer which was wonderful. My wife and host had the chilean sea bass which was out of this world. I had the filet which was perfectly cooked. The Opus One wine was spectacular. Need I say more? More

We have been members for years and never disappointed. The lobster bisque is regarded as among the very best in Florida. Staff knows your name and free birthday dinners are celebrated with staff singing your birthday song. I enjoy the crispy duck and my wife... likes their Oyster's Rockefeller and crab cakes. We went with a friend hoping for a lovely elegant evening. What we got was a dinner served so fast we could have been finished in 45 minutes The yacht club is a lovely venue with a great view of Palm Beach. Upon arrival you... are greeted by a maitre’D dressed in a tux. Menus are distributed, with the ladies given one with no prices. Very old world. Before we had a chance to read them the waiter Arrived waiting to take our order. Our order was placed, and the appetizers arrived before we had a chance to have even the shortest of conversations. Soon after our plates were removed, the entree was served. We barely had time to eat. I then recalled my first meal At Lutece, The timing of the service was absolutely seamless. You never felt rushed, or impatient. When a restaurant advertises itself as fine dining, your guests Should not feel as if they are being pushed out. The food is always good, although sometimes a little salty, And as I said before it is a lovely elegant place. Although for the Price, I didn’t feel I got my money’s worth. More

Clearly the best view in West Palm Beach, this membership restaurant has excellent seafood and steaks with world class service. Dressy for sure, men must wear jackets. A great place for a romantic dinner.

I had the pleasure of having dinner at this Yacht Club recently - an "A" experience!! Highly recommend. Menu is quite varied and the cocktails are very nicely poured!

Hello. Going on my first MSC cruise soon and we are booked in a Yacht Club suite. Question regarding the private restaurant for Yacht Club guests. What is the attire for dinner? Can you go fairly casual (like shorts) or do we need to plan for something a little nicer like slacks or a dress?

I like what MSC puts on their Daily Program when it comes to Suggested Evening Dress: Gala

"On Gala Night, dress to impress! Whether that means a tuxedo, suit and tie, evening gown or cocktail dress, or perhaps it's your very best jeans and polo shirt, your attire should fit your own level of elegance.  Please note that: shorts, flip flops, tank-tops and t-shirts are not welcomed in the main dining rooms, lounges, and theatre."

   However, depending on the cruise and the restaurant staff we have seen all sorts of varying degrees of undress allowed into the restaurants. 'Class is as class does'.

I will add that in some of the dailies the dress is deemed “casual” and  I’ve also seen “smart casual”. On casual nights shorts were no problem for men or women. Smart casual was long pants for men and pretty much anything goes for women. I didn’t see any shorts on gala night.    On our final night (Seaside) a grown man wore shorts and a ball cap to dinner and they allowed it. I was very disappointed in the cap. Dressy shorts on men have their place. Call me old fashioned, but a ball cap at dinner is just tacky and unrefined. IMO.

In addition to the previously mentioned policy for Gala Night, MSC's website FAQs includes the following under the heading of Dress Restrictions: "Specific restrictions may be enforced by onboard staff members including restaurant hostesses and management. At no point is swimwear allowed in any formal dining venue for any meal, including breakfast and lunch. Shorts, flip flops, and tank tops are not allowed for Evening Wear or Gala Night in the Main Dining Rooms, Specialty Restaurants, or MSC Yacht Club. T-shirts are not allowed to be worn for Gala Night. Dress code rules that are posted outside the buffet should be followed." It is quite true MSC often ignores their own stated dress policies. It is also quite true cruisers have been discreetly asked to return to their room and change clothes. Ultimately, the choice to play it safe or not is up to you.

In my experience, it is up to the staff at the dining venue. I've seen shorts and flip-flops at dinner and nothing is said and on the same cruise seen a person with a similar outfit asked to return in different attire.

If you plan for something a little nicer then you don't risk being turned away. The dress code does state 'no shorts'. You may or may not be turned away, both are possible.

On the Meraviglia a couple of weeks ago the only night they really enforced a dress code was Gala night.

We were on Seascape the week of July 30.

I mostly wore slacks or jeans to dinner, but did wear nice shorts at least one night, with no issue.

One day at lunch a guy shows up in a tank top, he had to put on a different shirt.

Gala night , some dressed to the nines, some dressed casual.

I always pack the standard 1 pair of khakis and 7 polo shirts for dining in the YC!

On my last cruise women could get way with anything for breakfast and lunch in the MDR (sandals and a spaghetti strap top), but men were asked to change if wearing a tank top or sandals.  

I'm sure that you can fit one pair of trousers into your suitcase to wear in the dining room.

It REALLY depends on the Dining Room Mgr/Maitre D'.  I've seen gents turned away for wearing shorts, and others sporting ball caps in the dining room at dinner  🤢

To quote an old Fat Albert character, "you're like an out-of-work teacher: no class." 😁 (Referring to repeat dress code violators)

Just got off the Seaside- it was all over the place.  We wore sundresses for the ladies and golf shorts/shirts for the men.  It was pretty casual, overall.  I did see one lady wearing a swimsuit and coverup to dinner and was surprised they didn't say anything.  Lots of t-shirts and flip flops though- nobody said anything.  I don't know what ship you are on, but I will say that the staff in the Seaside YC were outstanding.

Thomas keller pays tribute to palm beach’s golden era at his surf club restaurant — and on the golf course.

As one of the world’s most successful chefs and restaurateurs, Thomas Keller i s, as can be expected, big on implementing systems and sticking to routines — even when he’s having fun. Take, for example, his golfing strategy: Any round played before 10 a.m. must, must, must start with his Frank Sinatra soundtrack. [And if you’re wondering, sadly, the answer is no — he does not use his driver as a microphone. Sad face.]

“The Big Band era was something that I just loved. I love horns, so some of those riffs and sections on Frank’s songs just make my skin tingle,” the 66-year-old — who happens to be the only American-born chef to hold multiple three-star ratings from the prestigious Michelin Guide — shares during our mid-February Zoom call.

In fact, Ol’ Blue Eyes has been a leitmotif throughout much of his life. Frank provided the soundtrack to his youth, keeping Keller company when he was just a kid washing dishes at the Palm Beach Yacht Club, his mother’s West Palm Beach restaurant. And Sinatra also had a hand in his decision to return to Florida 20 years later to open a restaurant of his own, the glamorous gourmet Surf Club Restaurant where Frank was known to frolic in his heyday.

Keller takes me back in time to how it all — “all” being his joy of cooking — began: “My mother ran restaurants and worked nights, so after school, my brother Joseph and I would head to her so she could keep an eye on us, and we would help in any way we could. My brother was older, so he had more opportunities with the cooks, and I got to wash dishes, which was fine. It didn’t matter; it kept me busy.”

His mom, Betty, eventually hired him as a cook, and he, in turn, brought on one of his best friends, who had even less of a clue on what to do in the kitchen than he did. “We didn’t know how to cook anything other than Hamburger Helper, which is what we ate normally. But my brother, who had some skill in the kitchen and wanted to be a chef from a young age, guided me through the process of learning how to cook the fundamental things that the clientele at the Palm Beach Yacht Club wanted to eat. They would normally eat omelets, something I got good at, hamburgers — which I also got really good at — and grilled flank steak, sautéed au jus. It was my introduction to cooking but also running a kitchen. There were only three of us, and we would order things, inventory things, accept things, prepare things. We were not only responsible for the kitchen, but also for the restaurant; it was part of our daily ritual. We would cross the bridge — we lived right across the way in Palm Beach — and vacuum floors and clean the bathrooms — before starting our daily food prep. And I will say, it sparked in me this interest of being in the kitchen, though not necessarily becoming a professional chef.” Keller left Florida in 1976 and headed to Newport, Rhode Island, for the summer, but returned to Florida when the temperatures dropped in the Northeast. He loved the idea of being a nomad, going wherever the tide took him. “Cooking was not necessarily a career for me at that point, but it was a way of working in different locations. I realized that, as a cook, I could get a job in any location I wanted to,” he recalls.

When he headed back to the Ocean State in 1977, it was still with the intention of being a boy who just wanted to have fun. He still wasn’t sure what his career path would be until midsummer when he shifted from beach, party, repeat on Bannister’s Wharf to working for then-boss, French-born master chef Roland Henin, in the genteel seaside town of Narragansett.

His path and purpose then aligned with one very targeted question that Henin asked him: “Why do cooks cook?”

“I couldn’t really answer the question,” Keller admits now. “I fumbled with some stupid answer, so he answered for me. He said, ‘We cook to nurture people.’ That moment changed my life because I realized I was a nurturer. I realized, What better way to give to someone than to nourish and nurture them at the same time? So, I decided to become a professional chef, and because the chef I was working for at the time was French, I decided that French food was going to be my métier.”

So, in1983, he moved to Paris, where he apprenticed for various Michelin-star restaurants, including Taillevent and Chiberta, returning to the U.S. a year later, much wiser and with a more expansive repertoire. He opened his first restaurant, Rakel, in New York in 1986 before relocating to California; purchased The French Laundry in Yountville in 1994; opened his French bistro, Bouchon, in 1998; Bouchon Bakery in 2003; and Per Se in New York a year later. Since then, Keller has opened an outpost of Bouchon and Bouchon Bakery in Las Vegas and the Middle East, and has added Ad Hoc + Addendum as well as Mexican eatery La Calenda to his culinary roster. One of the most recent to open brings us to the reason for today’s interview: Surfside’s The Surf Club Restaurant.

There’s also that said history involves Frank Sinatra (though as we now know, Ol’ Blue Eyes wouldn’t have been the only reason for such a choice, as compelling a reason as it might have been). The Surf Club, as created by tire tycoon Harvey Firestone, was a playground for the rich and famous, known for its raucous Rat Pack parties and a slew of famous faces, including Elizabeth Taylor, Gary Cooper, Douglas Fairbanks Jr., Tennessee Williams, and even the Duke and Duchess of Windsor. “It opened on New Year’s Eve in 1930 and became one of the most recognized clubs in the world. There were so many people there — Winston Churchill, Ernest Hemingway, the Rat Pack! And I just fell in love with the property and what it represented, which was a period of history in America that was optimistic. We had just won World War II, America was flourishing and prosperous, and The Surf Club represented that,” he explains.

His vision was to revert the restaurant to its former glory, but with modern touches. The menu would be an elevated take on the classic Continental cuisine of the 50s and 60s, the era he himself grew up in, and align with the popular eateries of that time period, akin to The Colony, The Stork Club, The Brown Derby, and The Blue Fox. Culinary highlights include old-school dishes like Beef Wellington, Lobster Thermidor, Vegetable Louie, Oysters Rockefeller, and of course, his own Regiis Ova caviar.

The design curated by Martin Brudinzki Design Studio, the agency behind the beautiful and whimsical interiors at London hotspots like Annabel’s, Scott’s, and The Ivy, as well as West Hollywood’s new members-only club The Britely, is equally nostalgic thanks to Art Deco–inspired chandeliers, terrazzo flooring, a beaded ceiling, and the hand-painted trompe l’oeil mural by Gary Myatt.

This historical spot is still going strong four years after it first opened, mostly because Keller subscribes to the notion that if it ain’t broke, don’t fix it. And in this case, as is the case with most of his restaurants, consistency is key.

The idea of rediscovering this golden era of Miami, and of continuing to rediscover it, brings him back to his childhood. Thomas Wolfe wrote, You Can’t Go Home Again, and Keller might have believed that, too — but now, he is so very glad he chose to return. This restaurant, in particular, takes him back to his youth, the days where he was discovering his likes, discovering his affinity for cooking, discovering what would shape him, and to be able to look back while living in the present, is a beautiful thing.

“I was just starting to become aware of life: I was maybe 10 or 12 when I started working in Continental cuisine restaurants. That was all wrapped up in my childhood, and what more could a person want than to relive part of their childhood?” he agrees, adding, “Plus there were things about that era that were so seductive. The kind of restaurant we are talking about is not just food. The food is as important as any of it, and that’s why the items on the menu have reference points to history. It wasn’t just about the food; it was about the social interaction. The food, social interaction, and music all coming together to create an energy that’s unlike any other. The Surf Club Restaurant really represents what my vision was. It was the perfect location with the perfect concept, and I was excited to do it.”

So did he want to go back home again? No. But now, well, that’s a different story. In the end, there really is no place like home. “With the discovery of The Surf Club, getting to work with my partner, Nadim, and seeing what we’ve been able to do there, I just love the whole thing. I see the resurgence of excitement surrounding Miami. Even before the pandemic, I felt that it was the place to be. I grew up here; [Palm Beach] was a quiet town and there weren’t any great restaurants. There wasn’t a whole lot going on. Miami has once again become one of the most dynamic cities in America. It was lost for some time, but now, it’s back. To see its resurgence, not only as a city that’s well known in America but also around the world, is wonderful. I feel lucky to be a part of that.”

The day of our interview happens to fall on the 18th anniversary of the opening of Per Se, his iconic New York City eatery. It’s also noon on a Thursday so needless to say, this isn’t going to be a hardcore rager.

He did, however, commemorate the occasion (obviously). “I gave a few thoughtful comments about our restaurant, our staff, our alumni; the impact that we have and the opportunity for future impact. And then, you know, we had a glass of champagne,” Keller admits. [For those enquiring minds, the champagne in question was Modicum, a sparkling wine produced by Schramsberg, a joint venture between said winemaking team and the sommeliers at The French Laundry.] There was, of course, cake, because what’s any good celebration without it? But it’s soon back to work for Keller and co. Work precedes fun, and that’s just the way it must be. This is, after all, part of the recipe to his success. And no matter how you stir it, slice it, or dice it, Keller is absolutely one of the most successful chefs in the world. His accolades are numerous: The Culinary Institute of America’s “Chef of the Year” Award, the James Beard Foundation’s “Outstanding Chef” and “Outstanding Restaurateur” awards, and Michelin Guide’s Chef Mentor Award, among others. In 2001, Time Magazine named him America’s Best Chef. In 2011, he became the first American male chef to be designated a Chevalier of the French Legion of Honor. In 2017, Keller led the team from the United States to win its first-ever gold medal in the Bocuse d’Or, a prestigious biannual competition regarded as the Olympics of the culinary world. For embodying the state’s spirit of innovation, he was inducted into the 2018 California Hall of Fame. In June 2019, Keller became the first U.S. inductee into The Master Chefs of France, the oldest savory chef association in the world. He also holds an honorary doctorate in culinary arts from The Culinary Institute of America.

And his prowess in the world of haute cuisine has, inevitably, led to other ventures, ones that in his wildest dreams he couldn’t have imagined as a young kid just there to keep his mother company in the kitchen. He’s penned six cookbooks, including 2020’s The French Laundry, Per Se; and established an outpost in Yountville named Finesse The Store; Keller Manni Chocolate, a line of bean-to-bar chocolates with Armando Manni; the aforementioned Regiis Ova as well as a dedicated caviar & champagne lounge in Yountville, done in collaboration with Regiis Ova co-founder, Shaoching Bishop; Cup4Cup, a line of gluten-free flour blends and mixes; a brand ambassadorship with Hestan, which includes various cookware lines, including his namesake Thomas Keller Insignia Cookware Collection; a partnership with Cangshan knives; K+T, a collection of silver hardware and cocktail ware for Christofle Silversmiths; a collaboration with Raynaud and design firm Level that led to a collection of white porcelain dinnerware called “Hommage,” featured today at The French Laundry and Per Se; film work as a consultant on projects like Spanglish and Ratatouille; and now, most recently due to his love of golf, designing polos based on his restaurants’ logos with lifestyle brand Peter Millar.

Of the rewards he’s reaped throughout his culinary career, he says, “One of the best things about cooking is that it’s universal. I get to do so many things that I never would have gotten to do, meet so many people, experience so many different things, just because I’m a cook… and everybody has to eat!”

And what a wild ride it has been.

I wonder if he’s ever raced — and the answer is, of course, yes. He confides that he and chef friends Jérôme Bocuse — son of Nouvelle Cuisine pioneer Paul Bocuse, his mentor — and Daniel Boulud all hit tracks in Atlanta and New Orleans to race Ferraris. “I don’t consider myself a racer, but Jérôme did very well at least,” he remembers. “He practiced, he had lessons. Daniel and I would just have fun with [the cars] — “fun” being pretty fast with a Ferrari.” He chuckles, “I have a small amount of car knowledge — just enough to get me into trouble.”

That said, it’s not always a bad thing when these three culinary speed racers get together. In 2008, at the behest of mentor Bocuse, he, Boulud, and Jérôme Bocuse established the Ment’or Foundation, where he currently serves as president. The foundation is devoted to inspiring culinary excellence and preserving the traditions and quality of classic cuisine in America. In January of 2015, as president for the Ment’or Foundation, he led Team USA to a historic silver win in the Bocuse d’Or competition in Lyon, France, realizing Paul Bocuse’s dream of the United States making it to the podium. Two years later, in 2017, Team USA, led by executive sous chef Matthew Peters and commis Harrison Turone of Per Se, won gold.

Keller recalls both moments vividly — the Bocuse d’Or being among the top three honors of his life (along with receiving his Chevalier in the French Legion of Honor in 2011, which was presented by Bocuse, and becoming the first American chef to win three Michelin stars). After winning silver, he quite clearly remembers standing in Bocuse’s Lyon, kitchen. “I said, ‘Chef, we’ve done what we said we were going to do. We’ve been promising you for seven years that we’d make it to the podium.’ But it was earning that gold medal that he wanted Team USA to achieve. My biggest concern, as well as Daniel’s and Jérôme’s, was, Are we going to be able to do this while Paul is alive? It always makes me cry when I think about him.”

In 2017, a year before Bocuse’s death, Keller went to see his mentor and gave him the American flag he had been wearing around his own neck. “I said, ‘We’re coming back with gold on Thursday.’ Well, on Thursday, we came back and what did Paul have around his neck? The American flag. It was an emotional moment for all of us.”

Ironically, though he goes big or goes home for Team USA, when it comes to the subject of expanding his brand — the personality-driven part of his brand, which is — Per Se and The French Laundry — another American eatery is not an option. “There’s a very slight chance I would even do another fine dining restaurant in the genre of The French Laundry and Per Se. If it did happen, it wouldn’t happen in this country. We have two of the most recognized restaurants in America — two of only 135 three-Michelin-star restaurants in the world — and to have another restaurant like that in America would be a disservice to the brand,” he says, noting, “If I decided to open in Paris or London, that would be something, but honestly, as exciting and seductive as opening a new restaurant can be, running a new restaurant is a lot of work, and for a long time. I’m at an age now where opening a restaurant like that — which takes two to three years to build and then to open and operate for 10 or 15 years — is a huge commitment that I’m not sure I would make.”

Even so, he’s always open to new opportunities, whatever they may be, and will go where the wind takes him. Or where his golf clubs take him, more likely.

“One of my current goals is to get a hole in one. I came close the other day,” he confides with a laugh before adding, “If you have courage and confidence in yourself, then most of the time you’re going to be fine. Golf is the perfect example of that. Confidence and courage are such an important part of being a good golfer. If you don’t have the confidence to hit the ball, then you’re not going to hit it. If you don’t have the courage to step up and follow through, it’s just not going to be a good shot.”

But if you take your shot, and keep trying, you end up with an empire. And while that might not be a hole in one, no one could ever dispute that the result is a massive win all the same — whether or not Frank Sinatra is involved.

Transient slips are based on the annual leases so there are only a few transient slips available. Therefore, they cannot make advanced reservations until a few days prior to your arrival date. Valet is recommended for parking and is also free as long as you have a slip but is also a little tricky because they have heavy dining crowds for lunch and dinner. You may want to consider making reservations for dining as soon as possible. Capt. Willie and the head dockmaster Phil are very helpful.

The Florida Panthers will open their long-awaited new downtown Fort Lauderdale practice facility on Thursday, bringing family skating, club hockey and other activities on NHL-quality ice to the renovated and expanded War Memorial Auditorium complex in Holiday Park.

A limited schedule of opening-weekend events at Baptist Health IcePlex includes the debut of public skating on Thursday, with two-hour sessions at 1 p.m. and 6 p.m. There also will be skating on Saturday and Sunday at 1 p.m., 3:15 p.m. and 7 p.m.

Tickets will cost $17 ($14 for military). Skate rental is $5, and it’s $10 per hour for a skating aid (sort of a walker on ice). Before taking the ice at the venue, participants must register and sign a waiver at FTLWarMemorial.com .

An abbreviated selection of food and beverages will be available on opening weekend. The team shop will be open.    

Going forward, the venue will be open for public skating daily, along with freestyle figure skating sessions, learn-to-skate classes, free hockey tutorials, youth hockey camps and more. Registration also is open for adult hockey leagues, which begin in April. 

Baptist Health IcePlex is the first space to open after a $60 million renovation of the War Memorial complex, which also will include a new music hall and a second-floor restaurant, The Federal. 

The venue has two ice rinks, one public and one for Panthers practices that also can be used by the public when the team is away. Practices are open to the public, and admission to the bleacher seats around the team rink is free.

Boogie night: The other kind of skating happens on Thursday with a free night of roller disco at the Miami Beach Bandshell as part of the North Beach Social series. Beginning at 6:30 p.m., dance tunes will be provided by Charlie   Soul Clap with an opening set by Max Baum , against a backdrop of immersive visuals by artist Natasha Tomchin . Skate rental is $10 (free for Miami Beach residents), or you can bring your own. Food and beverages will be available for purchase, and the rear deck will be open to those not skating. Dip me in the water: Julian and Lisa Siegel will celebrate the sixth anniversary of Tarpon River Brewing in downtown Fort Lauderdale with another edition of the Take Me to the River Music Festival on Saturday from 2 to 11 p.m. The day will include music, food, vendors and beer from favorite local breweries, among them Orchestrated Minds, Invasive Species, Brewlihan, Gulf Stream, LauderAle, Yeasty Brews, Savage Lyfe, 3 Sons Brewing and many more. There will be music from, among others, Tand, Smerks and the Nightmares, Davie, Blackwater Sound, The Honest Liars and Dylan Zangwill . Weekend opera: Opera star Nadine Sierra , a Fort Lauderdale native who attended Dreyfoos School of the Arts in West Palm Beach , can be seen in more than 20 movie theaters across South Florida on Saturday afternoon in a live transmission of the Metropolitan Opera production of Gounod’s “ Roméo et Juliette ,” joined by tenor Benjamin Bernheim. ‘Prom’ dates: Slow Burn Theatre Co. opens its new production of “ The Prom ” at the Broward Center in Fort Lauderdale on Saturday for a run through April 7. The critically praised 2018 Broadway musical tells the story of an Indiana high school student who is barred from bringing her girlfriend to the prom, which attracts a quartet of well-intentioned New York theater folks who come to town to “help.” Critic Jesse Green at The New York Times called the show “such a joyful hoot. … With its kinetic dancing, broad mugging and belty anthems, it makes you believe in musical comedy again.” Performances this weekend are at 1 and 7:30 p.m. Saturday and 2 p.m. Sunday. Ultra music at DAER: Ultra Music Festival is this weekend in downtown Miami. Of course, it’s sold out .
